7. GREEN CHILLY PICKLE


INGREDIENTS:

Green chilly                              -        1kg

Tamarind                                  -        1/4kg

Gingelly seeds                         -        200gms

Salt                                          -        150gms

Vinegar                                    -        1/4tsp

Turmeric powder                     -        25gms

Jeera powder                           -        50gm

Asafetida                                 -        1/2tsp


Method:
  •         Warm oil n a vessel remove half the quantity of oil add green chilly, salt cook             them till it becomes pale in color.
  •         Add tamarind pulp, turmeric powder, jeera powder, mustard powder and                    fenugreek powder and mix well
  •     Cook for some time add 1/4 tsp vinegar.
  •         Allow the content to cool and then store in a a bottle.



8. FISH PICKLE


INGREDIENTS:

Fish                                          -        1/2kg

Garlic                                       -        150gms

Ginger                                      -        120gms

Green chilly                             -        150gms

Mustard                                    -        2tsp

Fenugreek                                -        2tsp

Chilly powder                          -        50gms

Vinegar                                    -        200gms


Method:
  •         Fry and powder the fenugreek mustard seeds
  •         Peel ginger, cut garlic into small pieces. Blend garlic and ginger to make a paste
  •         Steam the fish separately, remove the bones cut into small pieces.
  •         In the pan Heat oil add fish and add all the spices powder and vinegar
  •         Allow the content to cool and then store in a bottle
