   1. MIXED VEGETABLE PICKLE          
       
   Mixed vegetable pickle, can be prepared from carrots, peas, drumstick brinjal, beet root.





INGREDIENTS:

Mixed vegetable pieces             -        1kg

Red chili powder                       -        100gms

Mustard powder                        -        10gms

Turmeric powder                      -        10gms

Asafotida powder                     -        10gms

Onion                                       -        50gms

Lime juice                                -        150ml
(or) tamarind                            -        100gms
(or) citric acid                          -        5-10gm

Salt                                          -        100gms

Gingelly oil                             -        400gms


Method:

·        Mix vegetable with salt and turmeric powder and dry in the sun for 2-3 hours.
·        Heat oil, add all power and vegetables boil for some time finally add lime juice and a pinch of sodium benzoate or potassium metabisulphate.
·        Preserve the contents in a clean dry bottle.



2. MANGO PICKLE




INGREDIENTS:

Mango                            -        1kg

Salt                                 -        150gms

Chili powder                  -        100gms

Turmeric powder           -        1tsp

Fenugreek powder         -        1tsp

Oil                                 -        300ml


Method:

  •         Heat oil, add chili powder and other spices
  •         Add mango pieces, salt and boil it. And after cooling, fill in bottles.


3. ONION PICKLE



INGREDIENTS:

Chopped onions                       -        1kg

Garlic (peeled)                         -        100gms

Tamarind                                  -        100gms

Gingelly oil                              -        35ml

Mustard                                    -        25gms

Fenugreek powder                   -        10gms

Jeera powder                           -        10gms

Salt                                          -        10gms


Method:

  •    Heat oil, add garlic until it turns brown
  •    Add chopped onions, take thick extract of tamarind add to it
  •    After some time add salt, chilly, jeera, fenugreek powder, and mustard stir it. Until    the mix becomes thick
  •   Store in the sterilized clean dry bottles.(more...)
