4. GARLIC PICKLE



INGREDIENTS:

Garlic                             -        1/2 kg

Tamarind pulp                -        100gms

(or)lime juice                 -        150 ml

Salt                                 -        50gm

Mustard                          -        5gms

Asafetida                        -        5gms

Chilly powder                -        a pinch

Gingelly oil                    -        1/4gms

Fenugreek seeds             -        5gms

Turmeric                        -        5gms


Method:
  •             Fry fenugreek & asafetida and powder it.
  •             Peel the garlic & blanch it dry for 15 minutes
  •             Season the mustard seeds in oil and add garlic, tamarind pulp & SPICES
  •            Stir well till oil separates. Then remove it from fire.

5. TOMATO PICKLE



INGREDIENTS

Tomato                           -        1kg

Salt                                 -        100gms

Fenugreek powder         -        75gms

Tamarind                        -        100gms

Asafetida                        -        a pinch

Gingelly oil                    -        250ml

Vinegar                          -        6tsp

Citric acid                      -        1tsp


Method:
  •         Wash ripe tomatoes and cut into small pieces.
  •         Heat oil add tomatoes and cook well
  •         Add a thick extract f tamarind and boil it
  •         Add a spice powders, salt and cook for few minutes un till the oil gets separated.
  •         Finally add vinegar and a few drops of sodium benzoate



6. LIME PICKLE



INGREDIENT:

Lime fruit                       -        1kg

Salt                                 -        250gms

Red chilly powder          -        100gms

Fenugreek powder          -        30gms

Asafetida powder            -        2gms

Turmeric powder            -        1tsp


Method:
  •         Cut the lime into eight pieces, extract juice and mix with lime pieces
  •         Add salt and turmeric powder and keep for two days
  •         Season it and add all powder in the lime.(more...)
